This vegan apple cinnamon bread is a super tasty snack. It’s made like Jewish apple cake, with a center layer of apples and cinnamon, plus I added toasted walnuts. Have it with breakfast, pack it in your lunch, or enjoy it for an after-school snack. It is eggless and dairy-free, plus lower in added sugar and saturated fat as compared to most recipes. It is made with white whole wheat flour and almond flour, both of which provide fiber.

Why This Recipe Works

The applesauce helps to replace some of the oil that would be in a quick bread, as well as the eggs. It also adds natural sweetness and allows you to use less added sugar (in the form of maple syrup). It’s easy to make with just one bowl for most ingredients and a second for the apple mixture. I also like that it just uses one apple, which is not bad to peel and slice. One slice has an estimated 6 grams of protein and 264 calories.

  • Apples – Select a variety of apples that is good for baking, like Granny Smith, Empire, Honeycrisp, Golden Delicious, or Jonathans.   • Applesauce– look for natural applesauce without sugar, or make your own, like this honeycrisp applesauce.
  • Almond Flour – I chose to make this recipe with some almond flour for the higher protein content and lower amount of carbohydrates. There is a little more fiber too. Almond flour also gives it a more moist texture and means it won’t rise as high. Here are some comparisons and tips for baking with almond flour.
  • White Whole Wheat Flour – this has the added nutrition benefits of whole wheat flour but it is less dense, with a lighter flavor and texture. It is very good in baked goods.
  • Cinnamon – use regular or Ceylon cinnamon for warm spice.
  • Ginger – this is powdered ginger, not fresh ginger.
  • Olive Oil – select light olive flavor so there is not a strong olive oil flavor.
  • Walnuts – To toast the walnuts, place them in a nonstick skillet over medium heat for 3 – 4 minutes, stirring often. Or, place them on a baking sheet lined with parchment paper in a 350 degree F oven for 3 – 4 minutes. Watch them so they don’t burn.

How to Make Vegan Apple Cinnamon Bread

  • Preheat the oven to 375°F. Wipe a nonstick loaf pan with a little olive oil.
  • Combine the apples, walnuts, 2 tablespoons of maple syrup, cinnamon, and ginger in a medium bowl.

  • In a large bowl, mix together the white whole wheat flour, almond flour, baking powder, and salt with a whisk.
  • Add to this bowl with the dry ingredients the orange juice, applesauce, olive oil, and the rest of the maple syrup. Mix with a wooden spoon until all of the flour is combined with the other ingredients. Don’t overmix the batter.

  • Spread half of the batter in the bottom of the loaf pan. Top with the apple and walnut layer.

  • Bake for 40 – 45 minutes or until the top of the loaf is lightly browned.
  • Remove the pan from the oven and allow it to cool. Invert gently to remove from the pan.

Storage

Place leftover vegan apple cinnamon bread in a container and store it at room temperature for up to 3 days. Or wrap slices or the whole bread in plastic wrap or foil to store in the freezer for a few months.
