My Favorite Way to Make Oven-Roasted Potatoes
Usually, I make oven-roasted potatoes. How to make them is so easy that I have not posted it as a recipe on my blog. I start with 3 or 4 medium-sized potatoes and scrub them. Set the oven to 400 degrees F, convection. Then I just cut the potatoes into chunks or wedges. I toss them into a bowl and mix them with just a teaspoon or two of light olive oil.
Then, I lay the potatoes out on a baking sheet and sprinkle them with a little salt, pepper, garlic powder, and then paprika, dried rosemary, or herbs de Provence. Cook the potatoes for 15 minutes. Then, turn them over with a spatula, add a little more seasoning, and cook for another 15 minutes or so until lightly browned and soft inside.
My favorite potatoes to use are gold, tricolor fingerling, and red potatoes. But I will use other types like Russets if that is all I have. This article from Real Simple about roasting potatoes also recommends Yukon Golds and Russets. However, they recommend parboiling the potatoes first. This actually may decrease the vitamin C and potassium content, so for nutritional reasons I don’t recommend that.
See? super-easy. It works well when you are baking something else for dinner too, like stuffed peppers or roasted broccoli.
Baked Potatoes
I will also make baked potatoes: just pierce the potato and bake it for 45 minutes to an hour at 400 degrees. I have microwaved potatoes, but am not always thrilled with how they come out, as they can be a little dried out.
Cooking Potatoes in an Instant Pot
My new method is to cook potatoes in an Instant Pot. Pierce the potatoes with a fork. Pour about a cup of water into the bottom of the liner, add the rack, and place the potatoes on top. Seal and cook for about 15 minutes for medium sizes potatoes on high pressure. Smaller potatoes need less time and larger potatoes may need a few more minutes. Then, let the pressure release naturally. The potatoes come out nice and fluffy!
