Meatless Mondays is a movement started in 2003 to help people eat less meat….which will then hopefully continue on other days too. The pasta and risotto recipes include butter, cheese, cream, and/or broth. For plant-based versions, try using plant-based butter, cream, and vegetable broth. I would use the oat creamer I buy for coffee. Nutritional yeast with finely chopped nuts is used sometimes as a substitute for parmesan cheese.
