Ingredients
  

  • nonstick spray
  • 3 tablespoons white whole wheat flour
  • 1 tablespoon ground flaxseed
  • ½ teaspoon cinnamon
  • ¼ teaspoon baking powder
  • teaspoon ground cloves
  • 2 tablespoons plant-based milk
  • 2 tablespoons water
  • 2 tablespoons natural applesauce
  • 2 teaspoons light olive oil
  • 2 teaspoons maple syrup
  • ¼ honeycrisp apple, peeled, chopped fine, and divided

  • 1 small whisk

Method
 

  1. Spray the inside of a microwave-safe mug lightly with nonstick spray.
  2. Add the white whole wheat flour, ground flaxseed, cinnamon, baking powder, and ground cloves. Mix these together well with a small whisk or a fork.
  3. Next, add the plant-based milk, water, applesauce, olive oil, and maple syrup. Mix these well with a fork or tablespoon until all of the dry ingredients are incorporated into the batter.
  4. Set aside a tablespoon of the chopped apple pieces. Mix the rest of the apple pieces into the cake batter. Top with the remaining apple pieces.
  5. Cook for about 90 seconds. Remove the mug from the microwave with a potholder. Let the cake cool for a few minutes before tasting it.

Notes

Gluten-free version: substitute 1:1 baking mix for the white whole wheat flour. Make sure that the ground flaxseeds you are using are labeled gluten-free.
