Ingredients
  

  • 1 cup organic rolled oats (gluten-free)
  • 1 cup almond flour
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup plus 1 tablespoon natural peanut butter
  • ¼ cup plant-based milk
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • cup dark chocolate chips vegan
  • 6 chopped dates

Method
 

  1. Preheat the oven to 350° Fahrenheit. Place the parchment paper on 2 cookie sheets.
  2. In a large bowl, mix the oats, almond flour, cinnamon, baking powder, and salt together well with a spoon or a whisk.
  3. Add the peanut butter, plant-based milk, maple syrup, vanilla extract, dark chocolate chips, and chopped dates, and mix everything together well.
  4. Place tablespoonfuls of batter on cookie sheets at least 2 inches apart.
  5. Bake the cookies for 12 minutes, turning the rack around halfway through.
  6. Remove from the oven. After a few minutes carefully pull the parchment paper with the cookies off of the cookie sheets.
  7. After 5 minutes, transfer the cookies with a spatula to a baking rack to cool them completely.
