Ingredients

Apples
  • non-stick spray
  • 4 (22 oz or 627 gm) apples peeled and cut into 1/2 - 1" chunks
  • 2 tablespoons maple syrup
  • 2 tablespoons almond flour
  • 2 tablespoons water
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • teaspoon salt
Topping
  • cup quick oats gluten-free
  • 2 tablespoons plant-based spread
  • 1 tablespoon organic brown sugar
  • 1 tablespoon almond flour
  • ½ teaspoon cinnamon
  • ¼ teaspoon baking powder

Equipment

  • Slow cooker
  • Knife
  • Vegetable peeler or apple corer / peeler
  • Cutting board
  • Large spoon
  • Bowl

Method

  1. Spray the bottom and ⅓ up the sides of the slow cooker crock with non-stick spray. Turn the slow cooker onto high.
  2. Place the apple chunks, maple syrup, almond flour, water, lemon juice, cinnamon, ground ginger, and salt in the slow cooker crock. Mix them together.
  3. Combine the oats, plant-based spread, brown sugar, almond flour, cinnamon, and baking powder in a small bowl (the plant-based spread should be cold from the refrigerator). Cut the plant-based spread through the crumbs with two knives or a pastry cutter. Sprinkle this on top of the apple mixture.
  4. Cover the slow cooker and cook on high for about 2 - 3 hours, or until apples are soft. Keep an eye out for any browning: add a tablespoon or two more water if needed and stir.
