- Preheat the oven to 375°F. Wipe a nonstick loaf pan with a little olive oil.
- Combine the apple pieces, walnuts, 2 tablespoons of maple syrup, cinnamon, and ginger in a medium bowl.
- In a large bowl, mix together the white whole wheat flour, almond flour, baking powder, and salt with a whisk.
- Add to this bowl with the dry ingredients the orange juice, applesauce, olive oil, and the rest of the maple syrup. Mix with a wooden spoon until all of the flour is combined with the other ingredients.
- Spread half of the batter in the bottom of the loaf pan. Top with the apple and walnut layer. Spread the rest of the batter on top.
- Bake for 40 - 45 minutes or until the top of the loaf is lightly browned.
- Remove the pan from the oven and allow it to cool. Invert gently to remove from the pan.
