These vegetarian December recipes can warm your belly and soul for cozy nights. Try these vegetarian ideas to enjoy cooking in and creating festive moments for yourself or your loved ones. Whether you celebrate Hanukkah (actually that starts in November this year!), Winter Solstice, Christmas, Kwanzaa, or something else, here are some new ideas you may enjoy. These recipes are vegan with the exception of the Nutella trifle, which is ovo-lacto-vegetarian.

Easy Moong Dal Palak

Try Sheeba’s Easy Moong Dal Palak for a flavorful meal that’s easy to make in an Instant Pot or slow cooker. I have really been enjoying cooking with an Instant Pot this year so it is nice to find new recipes to try. Moong Dal is also called yellow split gram according to this article in the Times of India.

Lime and Coriander Rice

This Mexican-style lime and coriander rice from Corina is made on the stovetop. It is an easy side dish that would go well with enchiladas, stuffed peppers, tacos, and many more meals. And there is no added fat. I have been able to grow cilantro easily in my indoor hydroponic garden, so that makes it easy to harvest and enjoy for this recipe any time of the year.

Nutella Trifle

Try this nutella trifle for an indulgent and delicious dessert for a special meal. This is a gluten-free recipe from Kate. I love the chopped hazelnuts and chocolate topping, and her suggestion for adjusting the recipes for children.

Some adjustments I would try are choosing a lower sugar and milk-free hazelnut spread, using homemade chocolate vegan cake, and then I’m not sure what vegan cream would work best…..maybe whipped aquafaba with a little coconut cream. Let me know if you have tried something similar!

No Eggnog

This version of a Christmas favorite is perfect for those who don’t have dairy products or eggs. Rebecca from glutarama.com has made No Eggnog with brandy and Bird’s Custard Powder. This is a U.K. ingredient, but try vanilla instant pudding powder or cornstarch with a little vanilla and salt, according to this article from thekitchencommunity.org.

Here are some more warm and nourishing recipes perfect for cold nights….not to mention leftovers for quick lunches! Using a slow cooker or Instant Pot is a great way to make a comforting soup or stew.
