Meatless Mondays is a movement started in 2003 to help people eat less meat….which will then hopefully continue on other days too. Recipes to Try for Meatless Monday

This savory meal from the Family Food Kitchen is quick to prepare and vegan plus gluten-free. It is packed with vegetables and plant protein from chickpeas plus veggies.

This quick meal is easy to make on weeknights. It is rich in nutrients thanks to the Swiss chard and whole-grain pasta: perfect since you want Meatless Mondays to be healthier than usual, too!
Try this Creamy Mushroom Risotto by Julia Recipes. It’s made with arborio rice for a creamy texture.

The pasta and risotto recipes include butter, cheese, cream, and/or broth. For plant-based versions, try using plant-based butter, cream, and vegetable broth. I would use the oat creamer I buy for coffee. Nutritional yeast with finely chopped nuts is used sometimes as a substitute for parmesan cheese.
